One of the best local breakfast spots just might be Chefo’s Pancake House in Kimberly, located next to the entrance of beautiful Sunset Park. It’s been a staple in Kimberly since 2012 when Jose Bello first opened the doors. The restaurant is spacious and clean, with plenty of parking, and they serve both classic breakfast food as well as other meals with a Mexican twist. They also provide a vast lunch menu including salads, wraps, soups, sandwiches, and burgers.

One of the unique items offered on the menu are blintzes. For those who have never eaten a blintz, it’s a popular cigar-shaped filled pancake, like a crepe, filled with sweet ricotta cheese and dusted lightly with powdered sugar. These tantalizing little delicacies are offered plain or topped with mixed berries, blackberry, blueberry, cherry, cinnamon apple, lingonberry, peach, raspberry, or strawberry.

If you’re craving French toast, Chefo’s uses special mouth-watering homestyle cinnamon-swirl bread for their French toast offerings. One of their specialty items is Stuffed French Toast, consisting of three slices stuffed with cream cheese and topped with your choice of fruit. It comes paired with two eggs and your choice of bacon or sausage links. Yum! The bread used for French toast can also be purchased by the loaf.

If you love fluffy omelets — look no further! There are 15 different omelets on the menu that can be made with a variety of cheeses including American, Swiss, cheddar, feta, mozzarella, or parmesan cheese. All the omelets are made with five eggs and are served with American fries and your choice of toast or two buttermilk pancakes. Egg beaters or egg whites can be substituted for an additional fee.

Chefo’s specialty dish is the Spicy Mexican Skillet, made with real Mexican chorizo and jalapeño peppers. There are six other skillets available to try, and they are all served with American fries as well as a choice of two buttermilk pancakes or toast.

Other classic breakfast choices appearing on the menu include biscuits and gravy, steak and eggs, corned beef hash, croissant sandwiches, and eggs benedict. Pancakes, Belgian waffles, and potato pancakes are offered on the menu as solo items and can also be added to any order.

Bring the family to Chefo’s as they offer an extensive, affordable kids menu for both breakfast and lunch. The kids can even order Mickey Mouse pancakes which will be sure to put a smile on their faces.

The restaurant opens at 7 a.m. every day and is open until 2 p.m. Monday through Thursday and until 3 p.m. Friday through Sunday.
