Earth Day Cookies

These adorable little Earths are the perfect way to celebrate Earth Day this month! Green and blue cookie dough swirl together to make oceans and continents in these festive treats. Little heart sprinkles remind us to love our planet. A great way to get the kiddos in the kitchen, this easy cookie dough recipe takes only minutes. Now, let’s get baking!

 

Ingredients:

2 ½ cups flour

1 ¼ cups sugar

2 sticks unsalted butter, softened

1 egg

1 teaspoon vanilla

½ teaspoon almond extract

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

Blue food coloring

Green food coloring

 

Directions:

Preheat the oven to 350 F. 

In the bowl of a stand mixer, cream butter and sugar together until fluffy. Add extracts, salt, and egg, and beat until incorporated. Slowly mix in flour, baking powder, and baking soda. Mix until combined. 

Divide out ⅓ dough and dye it green. Dye the remaining dough blue. Take a 1 ½ inch ball of blue dough. Press little pieces of green dough around the blue. Roll gently, and place onto a parchment-lined cookie sheet. Place cookies 2 inches apart, fitting 6 on a sheet pan at one time.

Bake for 10-12 minutes. Bang pan on a heat-proof surface a few times, and press a heart sprinkle into the middle of the cookies. Let cool on the sheet pan for 5 minutes. Transfer to a wire rack. Let cool and enjoy!
