Watermelon Salad with Feta and Mint

Yes, I am one of those people who put salt on their watermelon, so this recipe makes perfect sense to me! The unlikely pairing of ingredients will surprise you! With sweet watermelon, salty feta, and cool mint in a tangy lime dressing, this is the perfect mix of sweet and savory. 

The secret to taming the sharpness of the raw onion is to marinate it in the lime juice for a few minutes before assembling the salad. It makes a big difference. Try this refreshingly healthy salad that’s perfect for a hot summer day!

 

 

Ingredients

1/2 small red onion, thinly sliced 

Juice of 2 limes

4 cups seedless watermelon, cubed

½ to 1 cup feta cheese, small cubed or crumbled

1/2 cup mint leaves, chopped

2 tablespoons light olive oil 

kosher salt and freshly ground black pepper to taste 

Directions

1) Place thinly sliced onion in a small bowl, juice the limes into the same bowl, and let onions steep while you prepare salad (about 10 minutes).

 

2) Put cubed watermelon into a large bowl, pour onion with lime juice over watermelon, add olive oil, and toss gently. Add mint and feta cheese, salt and pepper to taste, and lightly toss.
